Easy grab and go breakfast! This simple recipe is kids approved! You can add lettuce, avocado, salsa and grilled veggies for a stronger version that will keep you going all morning long!
Servings 2 burritos
- 1/2 each bell pepper chopped
- 1 tsp olive oil
- 4 each eggs whipped with water
- 1 tbs. Water (for egg)
- 2 Whole wheat tortillas 8 inch
- 4 oz cheddar cheese optional
Cook peppers with oil. Remove peppers from pan.
Cook egg/water mixture over hot skillet, without scrambling them. Move egg inward to cook although through, and flip, so you have a large "fried egg".
Cut in half and place one half on each tortilla.
Add peppers and cheese to the center of your tortilla and roll up.
