A warm and crisy tostada for breakfast? Of course! Add egg, Mexican cheese, cilantro and roma tomatoes and you've got a special treat.

Equipment

  • Bowl to mix eggs
  • Cutting Board and knife
  • Frying pan and burner
  • Baking tray and parchment paper

Ingredients

  • 1 corn tostada
  • 1 egg (scrambled or sunny side up)
  • 2 tbsp Mexican cheese blend
  • 1 tbsp red onion (diced)
  • ½ Roma tomato (diced)
  • 1 tbsp cilantro (chopped)
  • ¼ avocado
  • ¼ lime
  • shredded lettuce (optional)
  • salt and pepper to taste

Instructions

  • Preheat over to 350 degrees
  • Prepare eggs, any style.
  • Add shredded cheese and take it to the oven for 6 minutes, until cheese is melted and tostada is crispy.
  • In the mean time, prepare pico de gallo with diced tomatoes and onions, minced cilantro and squeezed lime.
  • When the tostada is ready, add pico de gallo and avocado on top.
