Carrot Oatmeal Cookies
Servings 12 cookies
- 1/2 cup white whole wheat flour or whole wheat pastry flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 1/4 cup coconut oil *can be replaced by grape seed oil
- 1/2 cup dark-brown sugar
- 2 each egg
- 1 teaspoon vanilla extract
- 1 cup shredded carrots
- 1 1/2 cups rolled oats
- 1/4 cup craisins
- 1/4 cup sunflower raw seeds
Preheat oven to 375F.
In a bowl, begin by mixing all moist ingredients(eggs, vanilla, coconut oil) and lastly mix in the sugar.
Add the flour, baking soda, salt, cinnamon, oats,
craisins and sunflower seeds.
Scoop out about an ounce per
cookie and in cookie sheet, bake for
20 minutes or until golden brown.
