Chicken Fried Rice

A healthier version of the traditional Chinese Chicken Fried Rice can be had by substituting cauliflower for the rice.

Equipment

  • Frying pan and burner
  • Cutting board and Rubber Spatula

Ingredients

  • 12 oz chicken breast small diced
  • 1 tbsp avocado oil
  • 1 cup carrot small diced
  • 1 cup broccoli florets coarsely chopped
  • 1 cup green peas frozen petite
  • cup green onions sliced, divided (about 4 green onions)
  • 2 cloves garlic minced
  • 1 tsp fresh ginger peeled and grated
  • 3 cups cooked rice or "riced" cauliflower or Jasmine brown rice
  • 2 large eggs lightly beaten
  • 2 tbsp soy sauce lower sodium
  • 2 tbsp sesame oil

Instructions

  • Heat a large nonstick skillet over medium-high heat. Add oil, and swirl to coat
  • Add chicken breast and cook until done, then add carrot and broccoli; stir-fry 3 minutes or until crisp-tender.
  • Add peas, 1/2 cup onions, garlic, and ginger. Stir-fry for 2 minutes or until onions are tender.
  • Add cooked rice or cauliflower rice; cook 3 minutes or until thoroughly heated, stirring occasionally.
  • Reduce heat to medium.
  • Push rice mixture to 1 side of the pan; add eggs to the opposite side of the pan.
  • Cook, without stirring, for 10 seconds.
  • Cook, stirring frequently, for 2 additional minutes, or until eggs are scrambled.
  • Stir in soy sauce, salt, and pepper.
  • Sprinkle with remaining onions.
  • Serve immediately.

Notes

NOTE: You can use Jasmine brown rice as a healthier alternative or cauliflower made into rice.  See this video for creating your own "rice" from cauliflower.
