These gluten free pancakes are super delicious and nutritious. We recommend not to over mix them so the more lumps the better the turn out. You can serve them with your favorite fruit and pure maple syrup! YUM YUM!
Pancakes made with coconut flour (gluten free)
Servings 6 servings
- 1/4 cup coconut flour
- 1/3 - 1/4 cup coconut milk
- 1/8 tablespoon baking powder
- 1 pinch salt
- 2 tbsp organic cold-pressed coconut oil
- 3 eggs
- 1-2 tbsp honey
- 1/2 tsp vanilla extract
- Maple syrup to taste
- 2 tablespoons butter preferable organic
Thoroughly mix the eggs, coconut oil, and honey together.
Add the coconut milk and vanilla extract.
Add the coconut flour, baking soda, and salt. Do not over mix.
Add a dollop of butter to a medium heat non-stick pan, when melting add a 1/4 cup of the batter and cook until slightly brown, flit to the other side.
Serve immediately for best results
