Need something sweet for Sunday brunch? This is a super refreshing fruit salad perfect for Brunch. Can you think of something more refreshing than a melon salad in a hot summer day? The sweetness, citrus and saltiness from this combination makes this dish very satisfying. I choose  Bulgarian Feta over Greek because of the law content of sodium. But again its a matter of choice. Here you have it! One of my favorite summer meals. This recipe can be and appetizer served with tortilla chips or a main dish served with romaine lettuce. All the enzymes of the raw fruit and vegetables will keep your skin glowing and nourishing your body!
For a more sophisticated presentation, you can add cooked shrimp to your wraps! This is a Vegan appetizer that would impressed anyone. The freshness of the coconut meat, the crispiness of the hearts of palm and the sweetness of the mango makes a perfect combination of flavors and textures.
Growing up in Peru, I learned the secrets of how to make a traditional Fish Ceviche with its white milky juice called "Leche de Tigre" witch means in English "Tiger's Milk". Leche de Tigre is the leftover flavorful juice in which the raw fish gets marinated and most people drink it afterwards.
In this Vegan recipe you will have almost the same effect after combining the lime juice, garlic, aji panca, ginger, salt and coconut milk. Even thought there's no fish to marinate, you still want to soak the coconut meat for a few minutes so it absorbs all the flavors. 
To create a beautiful presentation when serving this dish. You can use a martini glass or a square dish. Garnish it with mint or cilantro and the sliced avocado. In honor of our Ecuadorian brothers and sisters, I have decided to share this simple but delicious recipe that can be served as a side dish with any baked or grilled fish recipe. It's a classic Ecuadorian side dish made with a tuber known as "Melloco", a potato variety similar to our fingerling potatoes that are known to contain high levels of protein, calcium, and carotene. You can use Fingerling Potatoes instead of the original "Melloco" since I'm pretty sure it must be difficult to find in South Florida. Full of antioxidants, enzymes, vitamins, and minerals, this salad is sure to become one of your Spring and Summer favorite recipe. Chopped tomatoes, cucumbers, onions, and parsley combined with a drizzle dressing of lemon juice, olive oil, garlic, and mint leaves. Goes great in a pita with falafel, hummus, and tahini, but also works as a side dish with any middle eastern, Greek, or even American Food. Chicken Mango SaladIf you have leftover chicken, make this refreshing salad with tropical mangoes, tomatoes and cucumbers.  You can have your little ones helping to shred the Romain lettuce and the chicken.  This can be a fun family bonding time!     This mix of greens and superfoods can become part of a wrap a side or a meal on its own. You can top it with baked pieces of tofu, fish or chicken breast. Make it for dinner, take it to the office or a picnic and you will be replenishing your body with REAL foods that will give you nutrients and energy. Note: We like to keep the tomatoes, cucumber and feta on the side until the time of service so our greens stay crunchy. The following is a quick snack that even the little ones can make on their own! Whole wheat tortilla, rich sunflower butter, bananas and cocoa powder come together for a snack, breakfast or dessert. There are so many variations to this recipe, we will let you decide and share which is your favorite. Some suggestions include; almond butter, Kosher chocolate spread, crushed nuts for topping or even small pieces of fruit as part of the filling. Enjoy! Did you know that  in March we  celebrate the National Colon Cancer Awareness month? Yep! That's right, the Colon is such an important part of our digestive system, part of its job is to move out the residue of  our body(by this I mean the stuff that our body does not need). Keeping the Colon working at its full potential also aids in preventing Colorectal cancer which is seen more and more in industrialized countries like the USA. When the Colon cannot "pass" the garbage out, it can irritate the cells that cover its inside lining, when this happens, the possibility of damaging these cells and creating a toxic buildup can lead to dangerous polyps. Over time, some colon polyps can develop into colon cancer, which is often fatal when found in its later stages. The good news? By adding more fiber, water, Vitamin A & D (from real foods) and healthy bacteria we can help to keep it healthy. The following recipe has all of the "good stuff" to keep your Colon going so go ahead and share it with your family and friends.  At the Real Food Academy, we love to keep our community healthy! Kale is here to stay. A "wild" member of the cabbage family, this rough green can be cooked or made into salads such as the classic Caesar Salad created by August Escoffier for his friend Caesar Ritz. Kale is high in fiber (which helps digestion), full of phytonutrients which help detoxify our bodies and has a wide array of vitamins and minerals that are beneficial for the whole family. Make sure you "massage" the dressing on to the Kale so it really absorbs the flavor of the dressing. Serve it with grilled Portobellos, tofu or add it to a wrap for a twist!
