Can you think of something more refreshing than a melon salad in a hot summer day? The sweetness, citrus and saltiness from this combination makes this dish very satisfying. I choose Bulgarian Feta over Greek because of the law content of sodium. But again its a matter of choice.
This mix of greens and superfoods can become part of a wrap a side or a meal on its own. You can top it with baked pieces of tofu, fish or chicken breast. Make it for dinner, take it to the office or a picnic and you will be replenishing your body with REAL foods that will give you nutrients and energy. Note: We like to keep the tomatoes, cucumber and feta on the side until the time of service so our greens stay crunchy.

You can find it in an Indian grocery store or in the ethnic area of your local market. If you cannot find it, it’s ok to substitute it for Pita bread. The homemade Hummus, chicken and Feta cheese will be your good proteins and the Aurugula and tomatoes the extra balance between crisp and sweet! Enjoy!
Great alternative to Pizza. This is a kids approved version of our flat breads, for a more sophisticated palate you can add Kalamata olives, Feta Cheese, Aurugula pesto and Artichokes.
