He's sure to melt when you serve him some of these yummy holiday treats. Use your imagination for the decorating, or involve the kids! The story goes that Falafel, despite its strong connection with Israel, actually originates from Egypt, and was originally made from Faba beans. Its roots can be traced right back to the Christian of Egypt who were forbidden from eating meat during certain holidays and came up with a falafel-like alternative. This traditional recipe is full of flavor and texture. Serve it with Tatziki sauce and use it as an appetizer or in Pita bread with our Asian slaw.

Ratatouille Casserole

  The french dish Ratatouille is a variation of similar dishes from the mediterranean, you can have it as a main or side dish, for breakfast, lunch or dinner.  At The Real Food Academy, we like this dish not only for its rich taste but also because is nutritous and  fun to make!  Kids and adults like building this casserole style dish either family style or in ramekins. In the instructions, you will find terms such as concasse and chiffonade, these are technical terms for peeled and seeded tomatoes and thinlly sliced herbs. Follow the notes in the recipe so you can concasse your fresh tomatoes to perfection and chiffonade your basil like a pro! Bon appetite! Kale is here to stay. A "wild" member of the cabbage family, this rough green can be cooked or made into salads such as the classic Caesar Salad created by August Escoffier for his friend Caesar Ritz. Kale is high in fiber (which helps digestion), full of phytonutrients which help detoxify our bodies and has a wide array of vitamins and minerals that are beneficial for the whole family. Make sure you "massage" the dressing on to the Kale so it really absorbs the flavor of the dressing. Serve it with grilled Portobellos, tofu or add it to a wrap for a twist! A very easy to make recipe for moist, delicious breakfast or snack muffins. This traditional mexican dish has been turned around by my "jefa" (boss) the one and only Chef Maria! She did change the ingredients for this one and came up with a great vegan alternative.
