This salad was offered in one of our recent cooking classes. It was a hit to say the least! The recipe was inspired from one of my favorite chefs Caroline Randall, she wrote Soul Food with Love.

My husband and I had a similar salad in Santorini Greece last summer after a hot day at the beach. This recipe is very versatile, it can be served with any kind of food, as it will clean your palate for the next dish!This mix of greens and superfoods can become part of a wrap a side or a meal on its own. Note: We like to keep the tomatoes, cucumber and feta on the side until the time of service so our greens stay crunchy. This vegan creamy tomato soup is prepared with cashew cream. This recipe became mine and my husband's favorite soups. I usually make a double batch and freeze some for later. This whole wheat turkey pepperoni Calzone will have your children eating their vegetables. Its easy to make and you can create your own combination of fillings or use vegetarian cheese instead. We choose Turkey instead of pork pepperoni since it has less saturated fat and calories while maintaining a classic flavor! Enjoy!!
