Chinese Cauliflower fried no-rice must be one of my favorite dishes ever! Not only you are not eating empty calories with too much carbs with a traditional white rice but the cauliflower rice has a much better flavor. This simple soup is easy to prepare and can be done with the help of your little ones. Kids will actually be more inclined in eating it if it's served on bread bowl. Broccoli is an excellent source of vitamin K, vitamin C, chromium and folate. It is a very good source of dietary fiber, vitamin B6, vitamin E, manganese, phosphorus, vitamin B1, vitamin A, potassium and copper. Save your left-over Rotisserie chicken and left over veggies and whip up this quick and delicious Asian style dish. For best results cook your rice the day before. Using cold rice for this recipe will turn out the crispiest! Split Peas are popular in many cuisines from India to the Caribbean. You can find them in soups, breads, curries and stews. These beneficial Legumes are available in almost any supermarket, are high in fiber and protein, low in fat and easy to cook. Being high in fiber, it will keep you satisfied for a longer time and will also help prevent constipation. The following recipe is easy to make (it only takes 45 minutes) and can be served in many different ways! Serve it today as a Soup and save some leftover to serve with brown rice or Naan Bread tomorrow! You can always throw a tablespoon or two of Coconut Milk and have a totally different flavored soup. This recipe can be vegan by using veggie stock instead of the chicken and can be topped with Cilantro, minced Chives or Yogurt. This is one of my teenage daughter's favorite Meatless Mondays recipes! The following Vegan Tahi Coconut Soup is a nice option as an appetizer or main dish. You can always  add your favorite julienned vegetables  to make it heartier. We love to celebrate all the different festive holidays from around the world! St Patrick's Day is a day to cheer up with food and drinks. At our academy,  we create recipes that are cleaner and leaner without sacrificing  flavor. This recipe for mini Shepard's pies is a great rendition of the traditional one and very kid friendly. Lentil  Meatballs! This is one of our favorite recipes at The Real Food Academy. The first time we rolled it out on  a Saturday Cooking Class, the kids where a little apprehensive due to the fact that they where mixing lentils and oats, one of them even said that it was weird to mix the "lentils from their grandmas soup and the oats from the morning breakfast" (LOL!) To their surprise(not mine), the meatballs where delicious and they in fact ate them all! I have used this recipe for meatless meatballs in subs, tacos(exchange the marinara for fresh taco salsa) and alone as part of the dishes in a cocktail party. By omitting the meat and serving this recipe with Raw Zucchini spaghetti your are serving a light and flavorful "pasta" dish that  is rich in iron, Lycopene  and beneficial enzymes. This is a quick recipe that you can play with by adding 1 or 2 cups of vegetables instead of the chicken. Combine  sprouts, cabbage, snap peas right at the end with the mushrooms and other veggies. It’s really simple to make these wraps. I do recommend staying away from things that have a high liquid content (like tomatoes, salad dressing, etc) as they can soak through the Nori and get quite messy. My trick to get them to stay together beautifully is a very light smear of hummus along the edge, it binds it all together when you wrap it up. Chef Maria apple_carrot_muffins                 These gluten free muffins are easy to prepare and a great way beneficial vegetables and fruit.  You can always add nuts to make it more interesting!   This traditional mexican dish has been turned around by my "jefa" (boss) the one and only Chef Maria! She did change the ingredients for this one and came up with a great vegan alternative.
