The story goes that Falafel, despite its strong connection with Israel, actually originates from Egypt, and was originally made from Faba beans. Its roots can be traced right back to the Christian of Egypt who were forbidden from eating meat during certain holidays and came up with a falafel-like alternative. This traditional recipe is full of flavor and texture. Serve it with Tatziki sauce and use it as an appetizer or in Pita bread with our Asian slaw. Chicken Mango SaladIf you have leftover chicken, make this refreshing salad with tropical mangoes, tomatoes and cucumbers.  You can have your little ones helping to shred the Romain lettuce and the chicken.  This can be a fun family bonding time!     Superbowl Sunday is one of those days in America where you know for sure there will be plenty of party foods in every home. Not necessarily this dishes will be the healthiest so we wanted to share our easy version of Fish Tacos which includes an Avocado Cole Slaw that can be served by itself,  in wraps or sandwiches. The following recipe is high in mono-saturated fats, phytonutrients,  antioxidants and fiber from the avocados, cabbages, radishes, lemon, garlic, and  cilantro. So not only you and your family can have a fun and yummy snack, you all can also add the benefits of this real recipe so you can start the week energized! BTW! You can make this recipe with shrimp, sauteed veggies or chicken and place a bottle of Siracha nearby for any hot sauce lover! Lentil  Meatballs! This is one of our favorite recipes at The Real Food Academy. The first time we rolled it out on  a Saturday Cooking Class, the kids where a little apprehensive due to the fact that they where mixing lentils and oats, one of them even said that it was weird to mix the "lentils from their grandmas soup and the oats from the morning breakfast" (LOL!) To their surprise(not mine), the meatballs where delicious and they in fact ate them all! I have used this recipe for meatless meatballs in subs, tacos(exchange the marinara for fresh taco salsa) and alone as part of the dishes in a cocktail party. By omitting the meat and serving this recipe with Raw Zucchini spaghetti your are serving a light and flavorful "pasta" dish that  is rich in iron, Lycopene  and beneficial enzymes.
