We love to celebrate all the different festive holidays from around the world! St Patrick's Day is a day to cheer up with food and drinks. At our academy,  we create recipes that are cleaner and leaner without sacrificing  flavor. This recipe for mini Shepard's pies is a great rendition of the traditional one and very kid friendly. As vegetarians(or not), we need to add protein to our bodies. The following recipe is "pumped" with plant-based proteins from beans, seeds and oats. As a vegetarian, this is one of my to go recipes when I want a burger (you don't need to be vegetarian in order to savor this baby!).  At The Real Food Academy, we have also made this recipe with hundreds of kids  and just after we got their seal of approval (kids can be harsh recipe judges) we decided on going public with it! TIP: Serve it with our Sweet and Tangy Coleslaw with Apples and top it with avocado slices and  sprouts. Next time you have a gathering  your guest will be impressed with your new plant-based burger! Did you know that  in March we  celebrate the National Colon Cancer Awareness month? Yep! That's right, the Colon is such an important part of our digestive system, part of its job is to move out the residue of  our body(by this I mean the stuff that our body does not need). Keeping the Colon working at its full potential also aids in preventing Colorectal cancer which is seen more and more in industrialized countries like the USA. When the Colon cannot "pass" the garbage out, it can irritate the cells that cover its inside lining, when this happens, the possibility of damaging these cells and creating a toxic buildup can lead to dangerous polyps. Over time, some colon polyps can develop into colon cancer, which is often fatal when found in its later stages. The good news? By adding more fiber, water, Vitamin A & D (from real foods) and healthy bacteria we can help to keep it healthy. The following recipe has all of the "good stuff" to keep your Colon going so go ahead and share it with your family and friends.  At the Real Food Academy, we love to keep our community healthy!

Chicken-Parmesan

This super crispy recipe of chicken tenders can made with or without the tomato sauce and mozzarella cheese.

When are little chefs from TRFA prepare this recipes, we know that there will be NO LEFTOVERS!

At The Real Food Academy, we came up with this hearty version for the "cold" days ahead. You can always make your own Pasta or exchange the homemade pasta for sheets made out of Eggplant or  Zucchini in order to make this recipe Gluten Free! Serve it with our Warm Kale Antipasto Salad and Caramelized sweet plantains for a flavorful twist. Just made this recipe last night for our Adult Cooking class and it was a hit! The aroma of the Lobster pre-cooking in the oven was the omen of a good meal, the smell of the Brandy reducing into the shallots and the taste of the fortified stock had us smiling since the beginning. Like all good things, Risotto takes time and this recipe is well worth the waiting! Read the notes underneath on how to fortify your stock  and how to precook your Risotto so you can prepare it at least a day ahead(good idea for parties). Also, calculate about 1/2 cup of uncooked Arborio per person so you don't end up with too much left over. When having leftover Risotto, you can always form the cold mix  into patties and cook them on a skillet on low heat for 5 minutes(make sure you cook both sides of the patty).  You can also place the mix in a cupcake baking pan(fill only 1/2 of each cupcake), top it with shaved Parmesan and cook at 350 F until golden brown! See you soon! Our Mushroom Pate is such a versatile recipe! You can snack on it, spread it on toast or a veggie burger, fill mushroom caps and top them with Parmesan(broil them until the cheese is golden and crispy) or mix it with 1/2 cup of Goat Cheese for a richer spread. Drizzling it with some fancy Truffle oil before serving it will definitely wow your guests too so don't miss the opportunity if you have it available!

vegetable-lasagnaThis vegetable Lasagna will keep you coming for more. The different combination of veggies, tomato sauce, ricotta cheese and Bechamel sauce makes it a perfect dish! Satisfy your pasta craving with this simple and classic dish. Kids and adults love Ricotta Stuffed Pasta Shells served with saute vegetables or baked fish. You can always add Spinach, roasted peppers or eggplant to the stuffing mix for more of a Mediterranean flavor. Another recipe that was a hit on our "Breakfast at Macy's" event this past week. These quiches are filled with protein and flavor. As I was cooking the filling for them more and more people approached the kitchen trying to peek into what was cooking. You can always skip the turkey sausage and add some Shitake mushrooms for that earthy flavor. Spray some Truffle oil on top so you can take it onto the next level! Quick crispy Baked Chicken Tenders Parmesan make an easy weeknight dinner or game-day snack.
