What a great way to have your kids eating salmon and quinoa, pronounced (“keen-wah”). If you haven't tried quinoa yet, here are a few reasons why you should incorporate it in most of our meals. Quinoa is naturally gluten-free and loaded vitamins ans minerals. It is one of only a few plant foods that are considered a complete protein and comprised of all pernine essential amino acids. Quinoa also has a high protein to carbohydrate ratio when compared to other grain products.
When preparing this dish you have 2 options, you can pan fry it or bake it. Both ways will be a hit for kids and adults! Enjoy! What the heck are Shishito Peppers? These small, mild Japanese peppers are great for roasting, pan-frying and grilling. Their thin walls blister and char easily when roasted or grilled, taking on rich flavor that is delicious with coarse salt and lemon juice (my mouth is already watering). At The Real Food Academy, we love this simple way of broiling Shishito Peppers and usually plate them with a mild Tahini Sauce. Don't forget to serve them right out of the oven, and offer your friends a cold one to sip while munching on them! We love to celebrate all the different festive holidays from around the world! This recipe for mini Shepard's pies is a great rendition of the traditional one and very kid friendly.

This super crispy recipe of chicken tenders can made with or without the tomato sauce and mozzarella cheese.

At The Real Food Academy, we came up with this hearty version for the "cold" days ahead. You can always make your own Pasta or exchange the homemade pasta for sheets made out of Eggplant or  Zucchini in order to make this recipe Gluten Free! Serve it with our Warm Kale Antipasto Salad and Caramelized sweet plantains for a flavorful twist. Just made this recipe last night for our Adult Cooking class and it was a hit! The aroma of the Lobster pre-cooking in the oven was the omen of a good meal, the smell of the Brandy reducing into the shallots and the taste of the fortified stock had us smiling since the beginning. Like all good things, Risotto takes time and this recipe is well worth the waiting! Read the notes underneath on how to fortify your stock  and how to precook your Risotto so you can prepare it at least a day ahead(good idea for parties). Also, calculate about 1/2 cup of uncooked Arborio per person so you don't end up with too much left over. When having leftover Risotto, you can always form the cold mix  into patties and cook them on a skillet on low heat for 5 minutes(make sure you cook both sides of the patty).  You can also place the mix in a cupcake baking pan(fill only 1/2 of each cupcake), top it with shaved Parmesan and cook at 350 F until golden brown! A simple version of our Gluten free muffins, this recipe was adjusted to accommodate those costumers that don't have access to almond and brown rice flours(use unbleached, organic flours instead.) Satisfy your pasta craving with this simple and classic dish. Kids and adults love Ricotta Stuffed Pasta Shells served with saute vegetables or baked fish. You can always add Spinach, roasted peppers or eggplant to the stuffing mix for more of a Mediterranean flavor. apple_carrot_muffins                 These gluten free muffins are easy to prepare and a great way beneficial vegetables and fruit.  You can always add nuts to make it more interesting!   What happens when you mix the crispiness of the wontons, the freshness of Ahi Tuna and our Vegan Avocado Spicy Mayo?
