This salad was offered in one of our recent cooking classes. It was a hit to say the least! The recipe was inspired from one of my favorite chefs Caroline Randall, she wrote Soul Food with Love.
The simplicity and combination of flavors are a perfect match. This is a great salad to make during a hot summer day. My husband and I had a similar salad in Santorini Greece last summer after a hot day at the beach.
