Packed with fiber and vegetable protein. Great as a side dish or as a main dish.
Moroccan Lentil Salad
- 3 tablespoons olive oil
- 1 each red onion chopped
- 1 each tomato chopped
- 6 ounces lentils cooked
- 4 cloves garlic chopped
- 1 bunch cilantro chopped
- 2 teaspoons turmeric
- 2 teaspoons cumin
- 1 each lime
Pre cook lentils, drain, cool and reserve.
Saute red onions in warm olive oil until translucent.
Add garlic, turmeric and cumin.
Mix lentils, onions and rest of ingredients together.
Add cilantro and lime juice. Serve.
