In my house there will always be a container in the refrigerator or freezer. All I need to satisfy my craving or get a bust of energy is half of a square. You can make them into balls shape and your kids will have FUN preparing them!
Raw Chocolate Chia Energy Squares
No- bake raw energy bars packed with super foods
Servings 4 servings
- 1 cup dates pitted
- 1/3 cup cocoa powder raw unsweetened
- 1/3 cup cocoa nibs raw
- 1/4 cup chia seeds
- 1/2 tsp vanilla extract optional
- 1/4 cup sliver almonds raw
- 1/4 cup sunflower seeds raw
- 1/4 cup pumpkin seeds raw
- oat flour for dusting, optional
Place dates in bowl of food processor; purée until thick paste forms.
Add cocoa powder, cocoa nibs, chia seeds, and vanilla extracts, if using.
Pulse until all ingredients are combined.
Add almonds, sunflower and pumpkin seeds; pulse until nuts are finely chopped and well distributed through date mixture.
Spread large sheet of wax paper on work surface, and dust with oat flour, if using.
Transfer date mixture to wax paper, and use paper to press mixture into ½-inch-thick squares.
Wrap tightly, and chill in your freezer for 30 minutes before eating or in your fridge overnight.
These raw energy bars are the bomb! I promise they wont last in your fridge. This is the perfect snack for the afternoon or after dinner. There's no sugar added except for the natural sugar found in super nutritious dates. You can always make them sweeter by adding more dates or less sweet by using less dates.
