Instructions
  1. Preheat oven to 400ºF.
  2. Combine cauliflower and oil in a bowl; toss until coated.
  3. Place cauliflower in a non-stick foil-lined rimmed baking sheet.
  4. Bake, uncovered, for 35 – 40 minutes or until cauliflower is softened and lightly browned; cool.
  5. Place cauliflower, goat cheese, garlic, mustard, lemon peel, cayenne pepper and salt in a food processor; process until smooth.
  6. Transfer cauliflower mixture to a bowl. Add artichokes, Parmesan cheese, parsley and thyme; stir to combine.
  7. Spoon mixture into a greased 2 quart baking dish or 6 small ramekins. (May be prepared to this point and refrigerated for up to 24 hours.)
  8. Preheat oven to 350°F. Top dip with remaining Parmesan.
  9. Bake, uncovered, for 20 minutes or until light golden and heated through.
  10. Serve with crackers or baguette slices
