Ratatouille has been always a favorite dish of mine. Not only can be served with pasta, French fries or rice but serve over toasted flat bread and now you have a healthy Pizza.
Ratatouille Flat Bread Pizza
Traditional French eggplant stew over flat bread
Over medium-low heat, add the oil to a large skillet with the onion, garlic, and bay leaf, stirring occasionally, until the onion has softened.
Add the eggplant and cook, stirring occasionally, for 8 minutes or until the eggplant has softened.
Stir in the zucchini, red bell pepper, tomatoes, salt, and cook over medium heat, stirring occasionally, for 5 to 7 minutes or until the vegetables are tender.
Stir in half the basil, thyme, rosemary and few grinds of pepper to taste.
On a griddle or large pan, heat up the bread until crispy.
Remove from the heat and add 2 tablespoon of hummus to each bread.
Divide Ratatuille mixture evenly among the 4 flat breads.
Top with feta cheese, Kalamata olives, basil and arugula.
