Instructions
  1. Saute the garlic in olive oil, add the beans & water and cook in medium high for 7 to 10 minutes.
  2. Mash the beans by hand or in food processor, season with salt to taste and let them cool down before handling.
  3. In each cup, layer the beans, sour cream, lettuce, guacamole, salsa, cheddar cheese and top with cilantro or scallions.
Recipe Notes

* This is a vegetarian option, but you can also add a layer of ground cooked turkey or tofu for a twist.

* Make a large Seven Layer Cielito Lindo in a clear 2-4″ deep dish and serve with some chips as accompaniment.
