You'll be surprised how moist and delicious this vegan recipe is. We have made it on and on during our kids cooking camps and they love the outcome. Most often I've been asked how can avocado be used for frosting? If you think about, avocado has a very subtle taste, a creamy texture that combined with the cocoa powder, vanilla extract and the maple syrup you will have a delicious and healthy frosting. For best results, make sure you will refrigerate it before using.

Instructions
  1. Preheat oven to 350°F. Line a muffin tin with 8-12 paper or silicone cups.
  2. Whisk together the almond milk and apple cider vinegar, and set aside for a few minutes so the milk curdles.
  3. Beat in the sugar, oil, and vanilla until foamy.
  4. In a separate bowl, combine flour, cocoa powder, baking soda, baking powder, and salt.
  5. Slowly beat the dry ingredients into the wet until smooth.
  6. Divide the batter evenly between the 12 cupcakes.
  7. Bake for 16 minutes.
  8. Remove from the oven, and after a few minutes, move cupcakes to a cooling rack.
  9. While the cupcakes bake, make the frosting.
  10. Scoop out the avocado flesh, and place in a food processor.
  11. Add the cocoa powder, maple syrup, and vanilla, and puree until smooth.
  12. Frost the cooled cupcakes, and enjoy!
  13. NOTE: If the mix was not enough to make 12 regular size cupcakes, add 1/2 of the recipe more to this mix.
