This salad was offered in one of our recent cooking classes. It was a hit to say the least! The recipe was inspired from one of my favorite chefs Caroline Randall, she wrote Soul Food with Love.
The simplicity and combination of flavors are a perfect match. This is a great salad to make during a hot summer day. My husband and I had a similar salad in Santorini Greece last summer after a hot day at the beach. This recipe is very versatile, it can be served with any kind of food, as it will clean your palate for the next dish!
Refreshing Watermelon Salad with Avocado and Feta
Very simple but yet full of different flavors in one. This alad perfect for Spring and Summer.

- 3 tbsp olive oil
- 1/2 lemon juice
- salt to taste
- 1/2 small watermelon about 2 cups, preferable seedless
- 1 cup Cherry Tomatoes cut in halves
- 1 avocado diced
- 1/4 cup Feta Cheese crumbled
- 4/5 leaves basil you can also use mint or cilantro
Whisk the olive oil, lemon juice salt and pepper together in a small bowl.
Remove the rind from the watermelon and chop the flesh into ½ ice cubes.
Combine with cherry tomatoes and avocados in a serving bowl and gently toss.
Add the feta cheese and the dressing. Toss again.
If you are a lactose free just remove the feat cheese.
