Jícama, aka the Mexican Turnip, is  very low in saturated fat, cholesterol and sodium and also  a good source of potassium and Vitamin C. This recipe for Jicama chips is easy to make and will surprise your guests with its refreshing flavor. You can always shred Jicama and add it to salads, wraps and stews.

Salsa with Fresh Jicama Chip

Ingredients

  • 1 each jicama, large peeled and sliced thinly into chips
  • 1/4 cup jalapenos seeded, sliced
  • 2 tbsp scallions chopped
  • 1/2 each red onion, medium chopped
  • 1 each garlic clove minced
  • 2 each plum tomatoes diced
  • 2 each limes for juicing
  • 1 each avocado diced
  • 1/2 cup fresh cilantro
  • 1 teaspoon truffle oil optional
  • 1 dash salt and pepper

Instructions

  • Mix all the Salsa ingredients and season with salt and pepper to taste.
  • To assemble the chips: Distribute the jicama "chips" around a plate.
  • Add layers of Salsa, avocado, jalapeno and green onions.
  • NOTE: If using Truffle oil ONLY if using fresh basil.
