Popeye's favorite! Our kids love making this pasta every time. Enjoy with a light olive and garlic, white or tomato sauce. Make it a dinner: just add vegetables, chicken or turkey pepperoni.

- 2 cups Whole Wheat Durum Semolina Flour
- 2 eggs
- 1 tbp olive oil
- 1 tbp Water
- 1/4 cup Spinach Cooked and drained from all liquid
- 1 1/2 tsp salt
- extra flour for rolling the dough
Cook and drain your spinach. You may use frozen spinach as well, in this case you don't have to cook it but you still have to thaw it and drain it from any liquid.
Add your spinach to a blender or food processor and process until it becomes a paste. Try to make it as smooth as possible.
In a food processor, add the flour & salt and start the machine. Add the spinach, the 3 eggs (one at a time) the olive oil and the water. Make sure you follow this order to make your dough. It will take about two minutes in the food processor. You'll end with a nice sticky dough.
Take the blade out of the food processor. Take the dough and roll it in about 6-8 inches long. Wrap the dough in plastic and set it in the refrigerator for about 15 minutes.
Set about 1/4 cup of flour in a work table and roll your dough to a 1/8 of an inch. Pass it through your pasta machine to make it thinner and then through the machine again to form your favorite shape ( linguine or fettuccine)
Boil your pasta for 12 minutes and serve with your favorite sauce. You can add vegetables to make it extra healthy!
