STUFFED ZUCCHINI BOATS (GLUTEN FREE)

Ingredients

  • 2 each Zucchini, large
  • 1/4 cup olive oil
  • 1 tablespoon garlic minced
  • 1/2 cup cilantro minced
  • 1/2 cup Baby Spinach chiffonade
  • 1 cup Cheese (Provolone, Mozzarella, Feta, etc) shredded
  • 1 cup Cherry Tomatoes halved
  • 1 each avocado sliced

Instructions

  • Pre heat oven to 400 F, baking rack should be in the center of the oven.
  • Trim the ends off the zucchini. Slice in half lengthwise. Scoop out seeds with a spoon and discard.
  • Place zucchini on a foil lined baking dish. Drizzle inside the boats with olive oil.
  • Spoon in minced garlic, layer in baby spinach, cherry tomato halves, cilantro and 3/4 cups of the cheese.
  • Bake for 20 minutes pull out of the oven. Add cheese and veggies & broil (watching carefully) for a few minutes until the cheese is melted. Finish with fresh cilantro.
