Fun to make, delicious and nutritious! All in one!
Twice baked sweet potato
- 8 medium sweet potatoes
- 8 ounces cream cheese softened
- 2 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 2 cups of cheddar cheese
Scrub and pierce sweet potatoes. Bake at 400° for 1 hour or until tender. When cool enough to handle, cut a thin slice off the top of each potato and discard. Scoop out the pulp, leaving thin shells.
3. Bake, uncovered, at 375° for 15-20 minutes or until heated through. Yield: 2 servings.
In a small bowl, mash the pulp with cream cheese. Stir in brown sugar and cinnamon. Spoon into potato shells top with cheese. Place on a baking sheet.
Bake at 350 F until cheese is melted and golden.
