Vegan Cramberry and Pecan Cookies
Very delicious and very moist cookies!

Servings 12 Small coookies
- 1/2 cup sunflower spread I use Sunbutter
- 1/4 cup coconut oil soft
- 1/2 cup coconut palm sugar
- 2 tsp vanilla extract
- 1/4 tsp sea salt
- 1 cup gluten free all purpose flour
- 3/4 cup chopped pecans
- 1/2 cup dried cranberries
Preheat the oven to 350F degrees. minutes.
Remove from oven and let cool.
Line your cookie sheet with parchment paper.
Mix the sunflower spread with coconut oil, sugar, and vanilla until well mixed.
Add the salt and flour and mix until well combined. Stir in the pecans and cranberries.
Make 1 inch balls, and place a few inches apart on the prepared cookie sheet. You can use a mini ice cream scooper. Press down a bit to flatten.
Place in the oven and bake for about 13-15 or until golden.
