Wagon Wheel Pasta with Chicken Sausage

Ingredients

  • 1 pound wagon wheel pasta cooked, follow the box direcyion but cook 1 minutes less
  • 2 carrots medium size sliced into 1/4-inch rounds
  • 2 zucchini medium trimmed and cut into 1/2-inch rounds
  • 2 yellow sqaush medium, trimmed and cut into 1/2 rounds
  • 2 cups Cherry Tomatoes cut in halves
  • 1/2 teaspoon salt
  • 1 pound chicken sausages cooked, sliced in 1/2 inch rounds with no nitrates
  • 1/2 cup Parmesan cheese
  • 2 tablespoon lemon juice
  • 1 teaspoon lemon Zest
  • 1 teaspoon salt plus extra for seasoning
  • 1/4 cup basil roughly chooped
  • 2 tablespoon olive oil
  • 1/2 cup mascarpone cheese at room temperature (4 ounces)
  • 1 tablespoon lemon juice
  • Zest of 1 large lemon
  • 1 teaspoon salt plus extra for seasoning

Instructions

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  • Add the carrots and 1/2 teaspoon of the salt.
  • Cook until the carrots begin to soften, about 4 minutes.
  • Add the zucchini and the yellow squash and the remaining 1/2 teaspoon salt.
  • Cook until the zucchini is tender, about 2 minute.
  • Add the chicken sausage and cook for 1 more minute just to warm it up.
  • In a large bowl add the cooked pasta, veggies and the sausage. Gently toss it.
  • Add the tomatoes, lemon juice, lemon zest, chopped basil and salt and toss it a little more.
  • You can serve hot or cold.
