South Florida is booming with snow birds this week as spring break is underway in the sunshine state, and I’m really excited to tell you about this week’s adult and kids cooking classes. First, on Thursday night we’ll be focusing on a topic most students need help with: Knife Skills, Kitchen Essentials and Cooking Techniques. Then, on Saturday morning, kids will be doing their favorite: Making pasta from scratch! This week, our Food For Thoughts topic focuses on one of the most misunderstood superfoods out there: Beets! Beets are high in immune-boosting vitamin C, fiber, and essential minerals like potassium (essential for healthy nerve and muscle function) and manganese (which is good for your bones, liver, kidneys, and pancreas). Beets also contain the B vitamin folate, which helps reduce the risk of birth defects… Next, in our recipes section, we share simple & healthy dishes that include a healthy superfood vinaigrette for your salads, a hearty twice baked potato and, a delicious berry dessert that doubles as breakfast! Born in Venezuela, Chef Maria developed her passion for food as a young girl. In her early 20’s she came to the United States and entered the restaurant business in Boston MA. Later in San Diego CA she opened El Tucan Restaurant. It was in San Diego that Chef Maria was challenged by the culture and regional ingredients that ultimately contributed to the inventive style she’s known for today. Also during this time in San Diego, Chef Maria was introduced to organic produce importance of nutrition.
