Coconut Pancakes

  • 1/4 cup coconut flour
  • 1/3 - 1/4 cup coconut milk
  • 1/8 tablespoon baking powder
  • 1 pinch salt
  • 2 tbsp organic cold-pressed coconut oil
  • 3 eggs
  • 1-2 tbsp honey
  • 1/2 tsp vanilla extract
  • Maple syrup to taste
  • 2 tablespoons butter preferable organic


  • Thoroughly mix the eggs, coconut oil, and honey together.
  • Add the coconut milk and vanilla extract.
  • Add the coconut flour, baking soda, and salt. Do not over mix.
  • Add a dollop of butter to a medium heat non-stick pan, when melting add a 1/4 cup of the batter and cook until slightly brown, flit to the other side.
  • Serve immediately for best results
