Salsa with Fresh Jicama Chip

  • 1 each jicama, large peeled and sliced thinly into chips
  • 1/4 cup jalapenos seeded, sliced
  • 2 tbsp scallions chopped
  • 1/2 each red onion, medium chopped
  • 1 each garlic clove minced
  • 2 each plum tomatoes diced
  • 2 each limes for juicing
  • 1 each avocado diced
  • 1/2 cup fresh cilantro
  • 1 teaspoon truffle oil optional
  • 1 dash salt and pepper


  • Mix all the Salsa ingredients and season with salt and pepper to taste.
  • To assemble the chips: Distribute the jicama "chips" around a plate.
  • Add layers of Salsa, avocado, jalapeno and green onions.
  • NOTE: If using Truffle oil ONLY if using fresh basil.
