1cupall purpose flour, unbleached
6 1/2cupscauliflower florets
3/4cupBuffalo hot sauce
1/2cupcrumbled blue cheese
6ozyogurt, Greek, fat free
Salt and freshly ground black pepper
Preheat the oven to 450°F. Lightly spray a large non-stick baking sheet with oil.
Combine the water, flour, and garlic powder in a bowl and stir until well combined.
Coat the cauliflower pieces with the flour mixture and place on the baking sheet; bake for 20 minutes.
Pour theBuffalo hot sauce mixture over the baked cauliflower and continue baking for an additional 5 minutes.
Serve with light version of creamy blue cheese dressing and carrots & celery sticks.
Blue Cheese Dressing
In a small bowl, mash blue cheese and yogurt together with a fork. Stir in mayonnaise, lemon juice, honey, vinegar, and garlic powder until well blended. Season to taste with salt and pepper. Makes 1 cup.
