Super fun recipe to make with kids! Just place all the ingredients in large plates in order for them to be accessible and let the kids come up with their own layers (or follow our recipe). You can even practice your Spanish while you are at it!

128 oz canpinto beans or substitute for black, pink or red beans, organic, drained
1 cupsour cream
1cupsalsadrained of excess liquid
1cupcheddar cheeseor substitute with queso blanco
1/4cupcilantrooptional or substitute with scallions
1large bagchips*can be gluten free
Saute the garlic in olive oil, add the beans & water and cook in medium high for 7 to 10 minutes.
Mash the beans by hand or in food processor, season with salt to taste and let them cool down before handling.
In each cup, layer the beans, sour cream, lettuce, guacamole, salsa, cheddar cheese and top with cilantro or scallions.
* This is a vegetarian option, but you can also add a layer of ground cooked turkey or tofu for a twist.* Make a large Seven Layer Cielito Lindo in a clear 2-4" deep dish and serve with some chips as accompaniment.
