Stuffed Zucchini Boats (Gluten Free)
Servings 2 each
- 2 each zucchini (large)
- 1/4 cup olive oil
- 1 tbsp garlic (minced)
- 1/2 cup cilantro (minced)
- 1/2 cup baby spinach (chiffonade)
- 1 cup cheese (shredded) can use (Provolone, Mozzarella, Feta, etc)
- 1 cup cherry tomatoes (halved)
- 1 each avocado (sliced)
Pre heat oven to 400 F, baking rack should be in the center of the oven.
Trim the ends off the zucchini. Slice in half lengthwise. Scoop out seeds with a spoon and discard.
Place zucchini on a foil lined baking dish. Drizzle inside the boats with olive oil.
Spoon in minced garlic, layer in baby spinach, cherry tomato halves, cilantro and 3/4 cups of the cheese.
Bake for 20 minutes pull out of the oven. Add cheese and veggies & broil (watching carefully) for a few minutes until the cheese is melted. Finish with fresh cilantro.
